Spicy Vegan Power Bowl Recipe

Ingredients:

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Chipotle Dressing:

  • 1/4 cup vegan mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle powder (adjust to taste)
  • 1 clove garlic, minced
  • Salt to taste
  • Water (as needed for desired consistency)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, chili powder, garlic powder, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet.
  3. Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until tender and lightly browned, flipping halfway through.
  4. While the sweet potatoes are roasting, cook the quinoa according to package instructions. Once cooked, fluff with a fork and set aside.
  5. In a small bowl, mix together the chili powder, garlic powder, salt, and pepper. Toss the black beans (or chickpeas) in the spice mixture until evenly coated.
  6. In a skillet over medium heat, warm the seasoned black beans (or chickpeas) for about 5 minutes, stirring occasionally, until heated through.
  7. Assemble your power bowl by dividing the cooked quinoa, seasoned black beans (or chickpeas), sliced avocado, and roasted sweet potatoes among serving bowls.
  8. To make the chipotle dressing, whisk together the vegan mayonnaise, lime juice, chipotle powder, minced garlic, and salt in a small bowl. If the dressing is too thick, thin it out with a little water until desired consistency is reached.
  9. Drizzle the chipotle dressing over the assembled power bowls.
  10. Serve immediately and enjoy!
